Facts of the case: Significant and, in some cases, recurring hygiene deficiencies were identified at the food establishment, which pose a risk to food and meals.
a) The entire facility was contaminated. The floor was contaminated, particularly along the edges and in the corners, as well as under and behind the equipment. The wall in the kitchen opposite the grill was dirty. The floor of the storage room was contaminated with frozen condensation. Several electrical fixtures (switches, outlets, etc.) in the storage room were contaminated. The shelf in the storage room was contaminated.
b) Some of the items, fixtures, and equipment that come into contact with food were contaminated: a cutting board, several food storage containers, the knife holder, the saladette, the interior of the kitchen refrigerator, the microwave, the meat grinder, and the interior of the dishwasher; several Gastronorm containers used for storing food beneath the countertop were contaminated with meat residue.
c) Food was stored or displayed in such a way that contamination could not be ruled out. During the inspection, a significant infestation of blowflies was detected. Due to the presence of these pests, the food products manufactured, processed, and placed on the market at the facility were at risk of contamination. Food products were placed on the market that had been stored under unsanitary, unsavory conditions—specifically, in a cold storage facility with a moldy evaporator. Food products (including meat) were stored uncovered.
d) The sink in the kitchen lacked hand-washing supplies. The sink in the staff restroom lacked supplies for hand washing and hygienic hand drying. As a result, there was no easy access to facilities for hand washing and drying.
The food products were thus at risk of being adversely affected. Violations 1 a–d are to be considered a single offense.
